FOODIE FRIDAY: SUPER VEGGIE BOWL

I actually saw an ad photo of a veggie bowl and craved it for days. I couldn’t find a recipe attached to it so I decided to improvise. It turned out so yummy and it’s chalked full of all kinds of SUPER FOODS. I like a good balance of good and bad foods in my diet, but lately I’ve been craving veggies. I hope you enjoy it as much as I did.

Quinoa + Arugula Veggie Bowl

Ingredients:

  • 1-2 cups arugula

  • 1 cup cooked quinoa

  • half avocado, sliced

  • 3-4 radishes, sliced

  • quarter sweet onion, sliced

  • half cucumber, sliced

  • 1 cup frozen peas, cooked

  • slice of light laughing cow cheese

  • balsamic glaze

  • half lemon, to taste

Directions:

  1. Thoroughly wash all of your veggies. Cook the peas, quinoa and set aside.

  2. Add arugula to bowl as your base. Top with quinoa.

  3. Add avocado, radishes, onion, cucumber, peas.

  4. Top with cheese.

  5. Squeeze lemon over the dish, to taste.

  6. Drizzle with balsamic glaze

  7. Sprinkle with Everything Bagel Seasoning + pepper.
