Quick & Easy Recipes for Hosting & Living a Delicious Life

Hosting can be a stressful yet exciting endeavor especially if friends or family are staying a few days. One of the many ways that I show people love is through cooking and baking. Not only is it a way to express some creativity, but it also gives guests that sense of home - what better way to do that than home cooked meals. MacKenzie-Childs Courtly Check collection is so versatile and stunning when it comes to cooking and baking needs. I cannot recommend their serving ware and bake ware enough.

Which is why I put together this post - so I can show you exactly how I use my MacKenzie-Childs pieces on a daily basis. Each piece is a great way to show off your delicious food and add some style when guests are over. You can use my code LACY15 for 15% off your purchase (new or first-time users) for the next 48 hours!

BREAKFAST

For breakfast, I went with a quick Blueberry Croissant Bake using the 8” Courtly Check Enamel Baking Pan. The best thing about this recipe is it’s super easy and looks absolutely stunning when it’s all ready. Imagine a mix of French toast and blueberry pie - ITS. DELICIOUS. The baking pan lets me take it right from the oven to the table so it’s all ready to serve as soon as the timer goes off.

Blueberry Croissant Bake

Recipe from Butternut & Sage “Blueberry Croissant French Toast Bake”

Ingredients:

  • 1 1/2 sticks unsalted butter

  • 6 Large Croissants

  • 2 Cups Fresh Blueberries

  • 1/2 Cup Sugar + 2 Tbsp for Sprinkling on Top

  • 6 Eggs, at room temp

  • 2 Cups Heavy Cream

  • 2 Tbsp Pure Vanilla Extract

Directions:

  1. Preheat oven to 375 degrees F. Butter the 8” Enamel Baking Pan

  2. To make the custard: In bowl of mixer, beat butter and sugar together until creamy and mixed thoroughly. Slowly add in the eggs, one at a time. Then add vanilla, cream and salt. Mix until thoroughly combined (clumps are okay).

  3. Tear croissants in thirds and place in baking pan. Top with the fresh blueberries and pour your custard mix over the top.

  4. Sprinkle to top with your 2 Tbsp sugar and bake for 35 minutes.

  5. Top with powdered sugar and maple syrup.

LUNCH

For lunch, I went with my favorite summer salad using the Courtly Check Enamel Salad Serving Set. This recipe is refreshing while also being a bit savory and sweet. It’s both healthy and filling. The Serving Bowl accompanied by the acacia wood salad servers makes for the perfect base to this salad (would also be such a great housewarming or hostess gift). Both kids and adults will be in awe of this dish once you set it in the middle of the table.

Quinoa Summer Salad

Ingredients:

  • Garlic Olive Oil Quinoa (I use the packaged one from Target but any quinoa will work - prepare 1 Cup)

  • 1 English Cucumber, quartered

  • 1 Cup Strawberries, sliced

  • 1/2 Sweet Onion, diced

  • 1 Avocado, sliced

  • Shredded Cheese (I used Mozzarella and Gruyere)

  • Balsamic Glaze

  • Honey Roasted Pecan Pieces (optional but really adds so much flavor)

  • Everything But the Bagel Seasoning

  • Ground Black Pepper, to taste

Directions:

  1. Heat the Quinoa according to package directions.

  2. I like to quarter, slice and dice all my vegetables + fruits ahead of time and place in Pinch Bowls and Ice Cream Dishes. That way when you go to put this salad together it only takes a minute.

  3. In your Serving Bowl, add the entire package of quinoa as a base (approximately 1 Cup of cooked quinoa).

  4. Layer the cucumber, strawberries, sweet onion, avocado and shredded cheese.

  5. Top with the balsamic glaze, honey roasted pecans, EBTB seasoning and ground black pepper.

  6. ENJOY!

Dinner

For dinner, I went with my husband’s absolute favorite meal - homemade (kind of) pizza using the Courtly Check Enamel Abundant Bowl. Reed, my husband, is from New York, so he’s pretty picky when it comes to pizza. After A LOT of trial and error, I’ve created the perfect recipe that satisfies his craving. The hot breakfast sausage is key here - I know it might seem weird, but TRUST! Using the Enamel Abundant Bowl to serve this pizza is a total game changer and immediately adds luxury to a pretty casual dinner dish. This piece really does it all - from pizzas and galletes to saucier dishes like pasta or even your main course at Thanksgiving - it is the perfect piece for serving a family style dinner that is sure to WOW!

Sausage & Red Pepper Pizza

Ingredients:

  • Trader Joe’s Garlic and Herb Pizza Dough (this is my favorite for crust but any dough will do)

  • Pizza Sauce

  • Italian Cheese

  • Pepperoni (optional)

  • Hot Breakfast Sausage, ground

  • Sweet Onion, diced

  • Trader Joe’s Chili Onion Crunch (Momofuku also has a good brand)

Directions:

  1. Preheat oven to 425 degrees F.

  2. While oven is preheating, cook the hot breakfast sausage in a skillet and set aside.

  3. Prepare your dough according to package instructions. I roll mine out until it’s about 14” in diameter. Then fold edges over to make the crust.

  4. Top with pizza sauce. Then layer on the Italian cheese + pepperoni slices + cooked breakfast sausage + sweet onions.

  5. Add dollops of the Chili Onion Crunch.

  6. Cook 6-8 minutes or until bottom of crust is golden brown and the cheese is bubbly.

  7. Move to your Abundant Bowl to serve and enjoy!
